The pepper plant is native to Mexico, but also found in parts of South Asia. He began to be introduced in Spain in the sixteenth century, after the discovery of America, being Christopher Columbus who brought it. This American variety has evolved over the years to reach the piquillo pepper cultivation.
Its manually collection starts in mid-September, ending at the end of November. The peppers are peeled one to one without immersing in water or chemical solutions; this way they retain all of their natural features.
